This timeless dish combines tender beef, wholesome barley, and a medley of aromatic vegetables to create a soul-satisfying meal perfect for the colder months.

Beef Barley Soup Recipe
Ingredients:
- 3 lbs beef trim, medium diced
- 2 oz. sauté oil
- 3 qt. beef or veal stock
- 2 oz. butter
- 1 cup onion, small diced
- 1 cup carrot, small diced
- 1 cup celery, small diced
- 1 tbsp. tomato paste
- 1 cup pearl barley, rinsed and drained
- 1 cup turnip, small diced
- 1 tbsp. chopped fresh thyme
- 1 tsp. savory
- 1 oz. veal glaze
- Salt and black pepper to taste
- ½ cup chopped parsley (for garnish)
Instructions:
- Sear the Beef: Heat the sauté oil in a large pot over medium-high heat. Add the diced beef and sear until browned on all sides. Remove and set aside.
- Sauté the Mirepoix: Melt the butter in the same pot. Add the onions, carrots, and celery, and cook until softened and slightly caramelized. Stir in the tomato paste and cook for another minute.
- Simmer the Soup: Pour in the beef or veal stock, scraping up any browned bits from the bottom of the pot. Add the seared beef and barley, and bring to a gentle simmer. Cook for about 30 minutes.
- Add the Vegetables & Herbs: Stir in the diced turnip, fresh thyme, savory, and veal glaze. Continue to simmer until the barley is tender and the beef is fall-apart tender, about 20-30 more minutes.
- Season & Serve: Taste the soup and adjust seasoning with salt and black pepper as needed. Stir in fresh chopped parsley before serving.
